Ingredients:


 • 1 cup grated carrots

 • 1/2 cup unsalted butter, softened

 • 1/2 cup granulated sugar

 • 1/2 cup brown sugar

 • 1 large egg

 • 1 tsp vanilla extract

 • 1 1/2 cups all-purpose flour

 • 1 tsp ground cinnamon

 • 1/2 tsp baking powder

 • 1/2 cup raisins (optional)


For the Cream Cheese Frosting:


 • 4 oz cream cheese, softened

 • 1/4 cup unsalted butter, softened

 • 1 cup powdered sugar

 • 1/2 tsp vanilla extract


Directions:


 . Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

 . In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.

 . Beat in the egg and vanilla extract until well combined.

 . In a separate bowl, whisk together the flour, ground cinnamon, baking powder, baking soda, and salt.

 . Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
